When a person with this disease eats gluten in any form, his/her small intestine is attacked by the immune system resulting in damage to the wall of the small intestine, which stops the body from absorbing some nutrients. If this people continue consuming gluten for a long period of time, they may become anemic, have increased chances of cancer, be easily fatigued and have deficiency in their immune system. In a study it is seen that 60% of the children and 41% of adults who were diagnosed with celiac disease were asymptomatic.

Nowadays, many people are opting for gluten free recipes as they believe that gluten free recipes are healthier and have many benefits. How much of that is true is debatable because there are many gluten free foods that are as unhealthy as gluten containing food. For example, a pizza, whether gluten free or not is still unhealthy and will make a person fat. Gluten is a much used ingredient in food, especially packaged food and it is found in very improbable and unexpected food items. But as it is used as a flavoring, stabilizing and thickening agent, it is not really surprising. As a result the food choices of a person who has gone gluten free (whether by choice or by necessity), is rather limited.And it is very problematic to eat out or even at other people’s places because one never knows where gluten is hiding. Due to this factor people adopting a gluten free diet mostly need to prepare their own food. Though it can be annoying sometimes, but it is a very healthy choice.
